Dark Chocolate Sea Salt Peanut Butter Truffles

These sweet delights are chocolatey AND low carb. A win-win!


If you know me, you know I live for chocolate...and as much of it as possible. Except that too much of it begins to affect my waistline, which obviously becomes a problem. But when I discovered these Dark Chocolate Sea Salt Peanut Butter Truffles, I thought it was a dream come true. With 10 carbs, 120 calories and 4 grams of protein (so only 6 net carbs!), they've become a family staple.


1 cup peanut butter (I use crunchy cuz that's my favorite!)

1/4 cup sugar free syrup

1 tablespoon coconut oil

1 cup dark chocolate chips


Melt the coconut oil in the microwave in a large glass bowl. Then mix in the peanut butter and syrup. Freeze for 20 minutes before forming into balls on a glass plate. Freeze again for another 20 minutes. Melt one cup of dark chocolate chips (sometimes I mix in bittersweet chocolate as well) in a small pot on the stove. Dip the frozen balls until they're covered in chocolate. Sprinkle sea salt on top before freezing again. Enjoy!
